Maple Waffle Cookies

Quick and easy cookies baked up right in the waffle iron and then dipped in a thick maple glaze.

Equipment

  • 1 waffle iron Any size is fine
  • 1 hand or stand mixer
  • 1 cooling rack optional

Ingredients
  

  • 3 cups flour all-purpose, spooned and leveled
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 cup unsalted butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar packed
  • 2 eggs room temperature
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions
 

Waffle Cookies

  • Preheat your waffle iron.
  • Stir together the flour, baking powder, salt, and cinnamon. Set aside.
  • In a separate bowl, cream the butter and sugars until light and fluffy.
  • Add in the eggs, oil, and vanilla and mix to combine.
  • Add in the dry ingredients and mix just until combined.
  • Place one heaping tablespoon of dough on each section of the waffle iron. *See notes.
  • Close and bake for approximately 2 minutes. *See note.
  • Gently remove the cookies from your iron and allow to cool completely.
  • While the cookies are cooling, prepare the maple glaze.

Maple Glaze

  • In a small bowl, warm the butter and heavy cream in the microwave until butter is fully melted.
  • Add in the confectioner's sugar and maple extract and stir until smooth.

Assembly

  • Once the cookies are completely cooled, dip them one at a time into the glaze.
  • Using a fork or similar utensil, remove the cookies and allow any excess glaze to drip back into the bowl.
  • Place the glazed cookies on a cooling rack set over a cookie sheet or parchment paper (to catch additional drippings) and allow the glaze to set.

Notes

*I used a single (4 section) waffle iron. If you are using a smaller or larger iron, you may need to add more/less dough to each section. You want to nearly fill each section with dough.
*Cook times may vary depending on your waffle iron. I baked mine exactly 2 minutes and they were perfectly browned without being burnt. The cookies should release easily from the iron without sticking. They should also be soft, but firm enough to gently remove them from the iron without tearing. If the cookies are sticking to the pan or breaking as you remove them. try baking for an additional 30 seconds or more.
